12 vanilla wafers (Nilla Wafers)
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Line muffin tins with liners. Place one vanilla wafer in each liner.

Mix cream cheese, vanilla and sugar on medium speed until well blended. Add

eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 minutes at 325

degrees. Remove from pan when cool. Chill. Top with fruit, preserves, nuts

or chocolate.

(I added Nutella on top of the Nilla Wafer before I put it in the muffin liner. I also added a little Nutella in the batter and stirred it with a fork just enough to make the swirl marks. I also cut up Twix and put it in the middle before baking.)

(These are very rich, and you could get away with making mini cupcakes. Nilla Wafers come in Mini Size as well. Enjoy!)

One Random Thing about everyone, then later in the night after a few drinks we went around the table and did it again. Everyone was of course a little more blunt at that point. I’m bad I know..

With Good Company (an old coworker) the night was a success! Plus I laughed so hard I’m surprised I didn’t come prepared wearing depends..

We didn’t get lost which is awesome since both me and her are challenged when it comes to North,South,East,West.

It was nice to mingle with a few people (who knows when i’ll see them again, since theres a million people who go to these events. Unlike Utah I saw my same friends each time, and was able to keep up with new faces. Love you guys, you’re family!)

It’s been a short 2 months that’s for sure.. My new Job isn’t kickin my butt anymore with having to be on my feet for 8+ hours a day. Everyone has been real helpful with any questions I’ve had about the area. I’ve had a blast meeting lots of new people here in DC.

Being away from my family has been easier then I thought.. Thank you Technology! Well here’s to another month in DC and let’s see what July Brings!!!

I wake up pretty early in the morning, 4 a.m to be exact and I’m zoned out until I reach work. I get on the Metro & jump off to catch another train to get to work. Well lately I’ve been catching the metro going the wrong way than what I originally intended to. It sucks.. but I just jump right off and run to the other side to catch it going the right direction. I just need to go sit down in the same seat each day so when I get off at the metro stop I won’t be all confused. Like I said I’m still sleepy at this time, so the less I have to use my brain the better.
