Cream Cheese Cupcakes

12 vanilla wafers (Nilla Wafers)
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Line muffin tins with liners. Place one vanilla wafer in each liner.

Mix cream cheese, vanilla and sugar on medium speed until well blended. Add

eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 minutes at 325

degrees. Remove from pan when cool. Chill. Top with fruit, preserves, nuts

or chocolate.

(I added Nutella on top of the Nilla Wafer before I put it in the muffin liner. I also added a little Nutella in the batter and stirred it with a fork just enough to make the swirl marks. I also cut up Twix and put it in the middle before baking.)

(These are very rich, and you could get away with making mini cupcakes. Nilla Wafers come in Mini Size as well. Enjoy!)
